Vegetable stew with ostrich meat

Ingredients

400g ostrich thigh meat

3/2 cup pinto bean

700g Vegetables (onion, parsley, coriander, and fenugreek)

4 cups rice

 2 large cubes of fresh garlic

4-5 dried lime

Salt, black pepper, turmeric (required amount)

Oil (required amount)

1 large onion

 

Method

Rinse, dry, and chop the vegetables. Panfry vegetables. Soak pinto beans 4 hours ahead. Chop onion and sauté in oil to be brown. Brush meat with garlic and add into onion to panfry. Sprinkle with pepper and turmeric. Now add beans and water to the mixture.  Cook meat over a medium heat. It helps you to know that ostrich meat cooking time is a bit more than beef ones. Cook meat to medium rare, now add fried vegetable. Cook over a medium heat. Finally wash the dried limes, make a few holes on them and add to stew. Sprinkle with salt. Drain the presoaked rice.
